Turkey Stock - the Feighcullen Farm Way...

Always use the turkey bones to make stock.  You will be amazed at the difference in taste between your home-made stock and what you can buy in a shop.  If you don't need it immediately, freeze in small portions and use as required.  Making this stock couldn't be simpler...
Ingredients:
Turkey carcass or bones
1 bay leaf
Sprig of fresh thyme or marjoram
Salt & Pepper to taste
Instructions:
  • Put all the ingredients into a large pan & cover with cold water.
  • Bring to the boil and simmer for one hour.
  • Strain the stock
  • Pick any remainng meat off the bones & add to the stock.
  • Keep chilled for immediate use, or freeze for use later.

Turkey Soup (serves 4)
Ingredients:
  • 1.5lts     turkey stock
  • 250g      left over cooked turkey breast or leg meat, roughly chopped
  • 30ml      vegetable oil
  • 1           onion, chopped
  • 1 stick    celery, sliced
  • 1 sprig   rosemary, chopped
  • 1/2 can  chopped tomatoes
  • 4 sprigs parsley
Instructions:
  • Heat the vegetable oil in a large pan, add the onions, celery and rosemary, soften for 3-4 minutes.
  • Add the tomatoes, turkey meat and turkey stock.  
  • Bring to a simmer and cook for 10 minutes.
  • Garnish with sprigs of parsley and serve with hot crusty bread.

Turkey Wraps (serves 2)
Ingredients:
  • 250g        cooked turkey breast, cut into strips
  • 1              red onion, sliced
  • 1              red pepper, deseeded & sliced
  • 15ml         oil
  • 1/2 teasp. dried chilli flakes    
  • 4              ready made tortillas
Optional:  sour cream, salsa, cheese, guacamole
Instructions:
  • Fry the red onion & the pepper in the oil for e minutes;
  • Add the turkey strips & the chilli flakes;
  • Stiry fry for about 5 minutes until the turkey is piping hot;
  • Warm the tortillas and spread with sour cream, salsa, cheese & guacamole, then spoon in the turkey mixture, roll up & enjoy!
